World baking day: quick and easy recipes

World baking day is on the 17th of May and is a great way to relax and unwind through baking for yourself and your staff. SBMs can be busy and often can forget to treat themselves or simply take a break. We have sourced some quick and easy recipes for you to try out and treat yourself with. So, entice yourself to a well-deserved break and enjoy these tasty treats.

 

Chocolate fudge brownies

Treat yourself to these tasty chocolate fudge brownies as a pick-me-up during your hectic day. You can also offer some to your staff to motivate them and make them smile. Plus, this recipe is quick and easy to make so you can fit time in to bake.

Ingredients:

  • 170g unsalted butter
  • 150g milk chocolate, chopped
  • 225g caster sugar
  • 3 eggs
  • 30g cocoa powder
  • 95g plain flour
  • 100g milk and dark chocolate chunks

Ensure scales are set up correctly or to 0 if they are digital to get an accurate measurement.

How to make:

Step one

Preheat the oven to 200C/180C fan. Use some extra butter to grease a square tin. Melt the butter and chocolate in a large bowl by using the microwave. Make sure to do this in 30 second bursts until the mixture is smooth. Leave to cool for a few seconds.

Step two

Whisk the eggs and sugar in a mixing bowl until the mixture has doubled in volume and a ribbon holds for 3 seconds when you lift the whisk. Gently fold in the chocolate mixture into the egg mixture until combined.

Step three

Sift the cocoa powder and flour into the mixture. Mix thoroughly and fold in most of the chocolate chips, leaving some for the top. Scrape the mixture into the square tin ready for baking.

Step four

Place the rest of the chocolate chunks onto the top. Bake in the middle of the shelf for 25 minutes. It should be just set with a shiny top and slight wobble. Leave to cool and then slice and pack into containers to take into school.

 

Goats cheese and spinach muffins

Enjoy this savoury treat as an afternoon treat or have a few for your lunch to get away from the hectic schedule your job role has. Discover how to make them and give them a try.

Ingredients:

  • 175g self-raising flour
  • ½ tsp baking powder
  • 1 large egg
  • 40g unsalted butter, melted
  • 115ml semi-skimmed milk or alternative
  • 20g hard cheese, grated or alternative
  • 50g baby spinach, chopped finely
  • 1 ½ tbsp chives
  • 60g soft goat's cheese

How to make:

Step one

Preheat the oven to 200C/180C fan. Line a cupcake tray with cases.

Step two

In a large bowl, mix all the ingredients except the goat’s cheese using a wooden spoon.

Step three

When mixed, add 40g of the goat's cheese and mix thoroughly. Divide the mixture between the cases and add the remaining goat's cheese on top.

Step four

Bake for 15 minutes until risen and golden brown. Leave to cool on a wire rack and pack for your lunch.

 

Blueberry flapjacks

One of the most delicious quick and easy recipes you can make to fit into the busy working day SBMs have. Share with your staff as well and use these flapjacks to get to know your staff more.

Ingredients:

  • 250g oats
  • 125g butter
  • 125g light brown sugar
  • 2-3 tbsp golden syrup
  • 125g blueberries

How to make:

Step one

Preheat the oven to 200C/180C fan. Blend the oats, butter, sugar, and golden syrup in a blender or food processor. Make sure not to overmix otherwise you can lose the texture. Add the blueberries and stir with a spoon.

Step two

Lightly butter a baking tin and place the mixture into it. Use the back of a spoon to flatten the mixture into the corners. Bake for 15 minutes until golden brown.

 

Shortbread

By only using four ingredients you can make some gorgeous melt in the mouth shortbread. This will be perfect to enjoy with a brew during a break from work!

Ingredients:

  • 250g unsalted butter, softened
  • 350g plain flour
  • 50g rice flour
  • 100g caster sugar, plus 1 tbsp

How to make:

Step one

Preheat the oven to 180C/160C fan. Butter a tray. In a blender, or by hand in a bowl, mix together the butter, both flours and sugar until it resembles breadcrumbs.

Step two

Scoop the mixture together into a ball shape dough. Press into the prepared tin.

Step three

Using a sharp knife, mark the dough into roughly sixteen bars. Sprinkle the remaining sugar on top and bake for 25-30 minutes until set and golden.

Step four

Once baked, leave to cool in tin for 5 minutes before moving onto a wire rack. Using the knife, cut through your marks made earlier to created sixteen shortbread bars.

Cheese and potato loaf

Create a tasty alternative to bread with this cheese and potato loaf recipe. Perfect for eating alone or alongside soup for your lunch.

Ingredients:

  • 350g self-raising flour, plus extra for dusting
  • 2 garlic cloves, sliced
  • 2 tbsp olive oil
  • ¼ tsp salt
  • 1 tsp baking powder
  • 85g butter, cut in cubes
  • 150g natural yoghurt
  • 4 tbsp milk
  • 250g cooked potato, sliced
  • 50g parmesan
  • 85g cheese of your choice

How to make:

Step one

Heat the oil in a pan and gently fry the garlic until softened (10 minutes approx). Set aside and preheat oven to 220C/200C fan.

Step two

Mix the flour, salt and baking powder in a large bowl or food processor. Add in the butter and mix thoroughly until it’s gone. Make a well in the middle of the mixture.

Step three

Warm the yoghurt and milk together in a pan for 1 minute. It should be hot, and it may look lumpy. Tip into the bowl and quickly mix into the flour mixture using a cutlery knife. Stop as soon as everything is in the bowl.

Step four

Flour the surface and place the dough on to. Knead together with floured hands then press out to a large rectangle. Place the potatoes, garlic and most of the cheese onto it. Knead a few more times, then shape it into a round ball.

Step five

Lift onto a floured baking tin. Score the top and scatter the remaining cheese. Drizzle over the rest of the oil to coat. Bake for 25 minutes until risen, golden and bubbling around the edges.

 

Strawberry blondies

These strawberry blondies are the perfect self-indulgent treat for SBMs to take a break with. Pack them up for a snack and share out with your staff too.

Ingredients:

  • 100g unsalted butter, cubed
  • 200g white chocolate, chopped
  • 2 large eggs
  • 175g caster sugar
  • 100g strawberries, halved

How to make:

Step one

Preheat the oven to 180C/160C fan. Line a square baking tin with nonstick baking paper.

Step two

Get the butter and half of the white chocolate over a pan of simmering water in a bowl. Stir occasionally until melted. Let it cool a little.

Step three

Put the eggs and caster sugar into a large bowl and whisk until creamy. Pour the cooled chocolate into the bowl and fold in. Gently fold the flour afterwards.

Step four

Take the remaining chocolate and put into a small amount of flour. Stir three quarters of this into the blondie mixture.

Step five

Scrape the mixture into the tin and level it. Put the strawberries in a small amount of flour and place them on top of the mixture along with the small amount of chocolate left.

Step six

Bake for 40-45 minutes until lightly browned. Check after 30 minutes- if browning too quickly cover loosely with foil for the rest of the baking time. Cool on a wire rack and cut into squares (roughly 16).

Chorizo and cheese scones

Have a try at making these tasty chorizo and cheese scones perfect to go with your lunch or as a pick-me up snack.

Ingredients:

  • 225g self-raising flour
  • ¼ tsp salt
  • 50g butter, diced
  • 60g chorizo
  • 110g cheese of your choice
  • Pinch of paprika
  • 150ml milk

How to make:

Step one

Preheat oven to 220C/200C fan. Put the flour, salt and butter in a bowl and mix. Alternatively use a blender. Mix until smooth if there’s some lumps of butter rub with your fingers.

Step two

Cut chorizo and 60g of the cheese into small cubes and add them to the dry mixture. Add in the paprika.

Step three

Stir milk into the mixture and use a knife to quickly mix together to form a dough- stop when combined, don’t overmix.

Step four

Tip the dough onto a floured surface and knead together with your hands. Gently press out until roughly 4cm thick then stamp out 6-7cm squares. Re-shape trimmings and repeat until all dough is used. Place remaining cheese on top of dough before baking.

Step five

Spread out squares onto a greased tray and bake for 10-12 minutes until golden and well risen.
