Pancake recipe

What you’ll need

  • 5kg self-raising flour
  • 25 tsp baking powder
  • 25 tbsp golden caster sugar
  • 12 teaspoon vanilla extract
  • 5L milk
  • 75 eggs
  • 625g butter, melted, plus some extra to fry with
  • Rainbow colours gel food colouring- red, blue, yellow, green etc

These measurements serve 100 people. If you want to create more double everything up. Think about how many students you have in your school and how much of the ingredients your staff needs.

Provide our step-by-step guide to your canteen staff.

Step one

Mix all the ingredients together with a whisk in a large bowl (except the food colouring). Whisk until smooth. Divide the batter into five separate bowls adding the food colouring to four of the bowls whilst leaving one plain.

Step two

Melt a small bit of butter in a non-stick frying pan. Make sure that it is set at a medium-low heat. Once bubbling, pour spoonfuls of the mixture into the pan and shape it into large circles with the back of the spoon. There should be enough mixture to make four batches of each colour.

Cook each pancake for 2-3 minutes before flipping over to the other side for an extra minute or until they are cooked through. They should be slightly golden in colour.

Step three

Pile the pancakes on plates, ensuring everyone gets a variety of each colour. Serve with strawberries for decoration and drizzle some golden syrup on top to make them extra tasty.

Additional toppings you can use to make these pancakes perfect:

  • Ice cream for the top of the stack
  • Blueberries
  • Chocolate spread
  • Lemon juice

A quick tip for making a huge number of pancakes - as they come off the griddle, place them on a baking sheet in an oven. Loosely cover with foil (to keep them from drying out) until all the pancakes are cooked. They will then be ready to serve.

Celebrating Pancake Day in school is difficult as an SBM, but by providing this recipe and step-by-step instructions, your students can enjoy the day.
